Elvis Omelet (Chocolate, Peanut Butter, Banana Delight!)

An Elvis Omelet!

Bud and I ordered a chocolate banana omelet at breakfast one morning on our honeymoon, and I’ve tried several times to recreate it. Today’s attempt was the best so far Smile

Not the best picture, but above is what we got on our honeymoon (we added peanut butter and sliced bananas to the top).

Here’s how to make your own!

Step 1: Gather your ingredients

  • Eggs
  • Peanut butter
  • Banana
  • Dark chocolate
  • Cinnamon (not shown)

Step 2: Whisk together 3 eggs (1 whole, 2 whites) and add a sprinkle of cinnamon

Step 3: Pour egg mixture onto hot pan

Step 4: Add 1/2 of banana (sliced) and 1/2 of dark chocolate piece (finely chopped) to 1/2 of the egg

Step 5: Flip the half with no toppings over the topping’d half

*Try not to break it!

Step 6: Let sit for a minute or so, and flip. Continue flipping back and forth (every minute or so), until omelet looks fully cooked to your liking!

Step 7: Take picture of cat plate

Step 8: Put omelet on plate and top with peanut butter, remaining banana slices, and remaining chocolate pieces

Step 9: Drool

Step 10: Devour with fork

Step 11: Lick plate

Step 12: Make yourself another (hahaha just kidding, this is one filling breakfast!)

I enjoyed my omelet with a tasty tasty cup of caramel apple coffee.

Here it is! Archer Farms Caramel Apple coffee. MMMMMMMMMMMMM. It seriously tastes like apple cider, in coffee form. Deeeelicious. I’ve had my eye on this for a while, so when my mom called from Target asking what coffee I wanted for my visit, it was #1 on the list!

After breakfast, I did a shortened version of Body Pump in my parent’s workout room. I set the timer on my phone for 2 minutes, and when it went off, I switched what muscle group I worked.

We drove a little over an hour to Harney & Sons for a nice lunch and tea tasting. Such a cute place!

Lunch for me a was a bowl of greek yogurt with fresh granola and fruit on top. It was so good! And I was pleasantly surprised to find pineapple in there!

Harney & Sons is a specialty tea place that my parents love. Well, they love their tea. The customer service wasn’t super today Eye rolling smile

The tea room had a BAZILLION flavors, and we got to choose any one we wanted to try.

I tried the Cranberry Autumn, which was pretty good. It smelled better than it tasted though…so I ended up leaving with a different flavor that smelled amazing.

It was a beautiful day in New York, so we went on a short walk after our tea tasting. Look how beautiful the leaves are!

We stopped at PeachWave on the way home for some frozen yogurt….holy cow this stuff was delicious! In my cup: peanut butter yogurt, pumpkin pie yogurt, graham cracker crumbs, and peanuts. Yum. Yum. Yum. We’re definitely going to have to go back at least once while I’m here!

My mom doesn’t really like yogurt, so she’s been hesitant to try out frozen yogurt. I think she’s a fan now!!!

Trip to Connecticut

Greetings from Connecticut…where the weather is cool and the leaves are pretty!

I’ve been up since 4:30, so this post is going to pretty quick Smile 

Breakfast:

Gobble gobble! Had to take a picture of my bowl before putting yogurt inside…too cute! (we got a few of these for 25 cents each at Target last year Smile )

in the bowl: vanilla and chocolate greek yogurt. I had to use up the rest of my yogurt since I’ll be gone for two weeks…so it all went into the bowl!

And I had one banana left, so I added some peanut butter to it and called it a meal! Gotta fuel up for a long day of sitting on my butt!

Lunch:

A bunch of snacks I packed:

  • Kashi Soft Baked Chocolate Bar (pretty good…tasted like a brownie!)
  • Cocoa roast almonds
  • Pumpkin seeds
  • Dry roasted edamame
  • Black coffee on the airplane (surprisingly tasty!)

Dinner:

  • 1/2 pretzel roll (we found these in the freezer from our visit in July!)
  • Chicken & veggie (fresh ones from the garden!) stir-fry with brown rice

Toby is such a cutie! He loves jumping on laps, sitting on laps, sitting at the dinner table…he’s pretty much a dog in a cat’s body Rolling on the floor laughing

Free Lunch Friday!

I’m so happy that it’s almost the weekend…tomorrow I’ll be in Connecticut Open-mouthed smile

Before I get to today’s freebie lunch (!!!), here’s what I had for dinner last night:

Dinner:

Bud and I love these veggie pizzas – we buy them at Randall’s for usually about $4 each, which is a pretty good price for such a healthy pizza!

I added garlic powder, italian seasoning, and some grilled chicken (for extra protein).

Sliced, and served with a side of baby carrots. An easy and SO tasty dinner!

*I saved the other half of the pizza for dinner tonight..can’t wait!

The pizza is supposed to have 3 servings, but we always split it and never feel like we’re eating too much. The crust is very thin, and there isn’t an obnoxious amount of cheese on top. And, half of the pizza is only about 330 calories, so no big deal!

Breakfast:

A nice big bowl of chocolate/pumpkin/banana oatmeal. For the recipe, see Chelsey’s blog.

My changes to the recipe: no apple & cranberries, added 1/2 scoop chocolate protein powder and 1 teaspoon cocoa powder.

YUM!

This oatmeal was seriously filling! Usually I need to eat about every 2-3 hours, but this held me over from 5:30 a.m.  through Body Pump and all the way to my free lunch Smile

Macaroni Grill had a Facebook offer to get a FREE choose 2 lunch combination.  Ummm, yes please!

Bonus – there was a restaurant literally across the parking lot from the gym I was at for Body Pump. How convenient!

The waiter brought a MASSIVE piece loaf of bread to the table as soon as I sat down. Their bread is dangerous.

I ended up eating maybe 1/4th of it. Not bad! It was so warm and fluffy though…if my lunch took longer than it did to get to me, the loaf probably would have been gone Smile with tongue out

On the left: Market Chopped Salad (turkey, pepperoni, tomato, lettuce, cheese, beans, and a few other things that I’m not sure of). It was pretty good…but didn’t knock my socks off.

On the right: Pomodorina Soup (tomato basil soup with cheese and a massive crouton)

The soup was delicious! I wished I had a grilled cheese sandwich to dip in it.

Too bad the offer wasn’t available for carry-out…I could have saved a little money (still had to tip the waiter!).

Last night I called our favorite frozen yogurt shop to confirm that their pumpkin pie flavor would be released today (I was so so so excited!). I got the green light….so this afternoon I treated myself to something mighty delicious.

I’ll probably be going once or twice a week every day once I get back from Connecticut Rolling on the floor laughing

Plans for the night…. packing!

The cats have been going crazy today – they knocked my turkey beanie baby off the sink ledge, pushed their cat food and water into the middle of the kitchen, and Charlie chewed through destroyed two rolls of toilet paper (he snuck into bag when I wasn’t looking…little booger!). I think they know something’s up!

It’s Turbo-Kickin’ Thursday!

Yeeeeup, I love Turbo Kick. Today’s class was awesome, as usual…I felt bad for the instructor though (not very people showed up, and she was asking us what she can do to get more people there) Sad smile I guess if a class doesn’t get enough people, the gym eventually cancels it?? How horrible!

My opinion: if at least one person is showing up, then they should keep the class. Gym memberships aren’t free (or cheap, usually), and Turbo Kick should be offered no matter what. Hmpf!

Breakfast:

A delicious bowl of apple cinnamon overnight oats (enjoyed at 5 a.m. while watching last night’s Modern Family….that show is hilarious!). Thank goodness I was able to fall asleep for a few more hours after breakfast!

  • 1/2 cup oats
  • 1 cup unsweetened almond milk (twice as much as usual…a good choice!)
  • 1 small gala apple, finely chopped
  • Cinnamon
  • 1/2 tbsp. chia seeds
  • 1/2 tbsp. flaxseed
  • Topped with homemade almond butter

Lunch:

Turbo Kick definitely worked up my appetite today! Thank goodness I had a delicious lunch waiting for me in the fridge when I got home Smile

Leftovers from last night’s dinner!

  • Salmon with a sweet chili glaze (and ketchup for dipping)
  • Cooked baby carrots (with a little bit of butter & brown sugar)

Mmmm mmmm. This is definitely one of my top 10 favorite meals.

While I enjoyed lunch, my frozen banana delight was cooling in the freezer!

Something even more exciting than salmon and frozen banana delight happened around lunchtime today….

I got my first real letter from Bud today! Four whole pages about boot camp Red heart

He seems to be doing really well – they’re letting him play music on Saturdays (he’s going into the Navy to play tuba) because he passed his first physical fitness test.

Now I have two favorite days of the week (Thursdays: mail from Bud day & Saturdays: phone call from Bud day). Only 35 more days to go – thank goodness!

Although I’ve been trying to stay really busy with classes at the gym and starting to pack for our move in November, it’s been getting really tough to be here without Bud…….so……I’m going to CT on Saturday to visit my parents for two weeks! Connecticut is so so so beautiful this time of the year, and I can’t wait to go apple picking and do lots of fun things!

I went and bought a carry-on suitcase at Kohl’s today….check out my savings below!

Geeeez….$169.99 for a carry-on….are they crazy?! It doesn’t even have wheels that turn all the way around!

The one I got was on 50% off sale, and I used a 15% off coupon and $10 off $30 coupon. In the end, a pretty good price!

While out and about, I grabbed a free iced coffee at McDonald’s.

Afternoon Snack:

A cookies n’ cream protein shake. Nothing too exciting!

  • 1.5 cups unsweetened vanilla almond milk
  • About 14 ice cubes
  • 1 scoop cookies n’ cream protein powder

This shake gave me the chills….I had to put a sweatshirt on to finish it! This actually happens a lot to me when I drink cold things. Hmmmm.

I finally found our box of fall/Halloween decorations (way up on the top shelf of my closet – I had to whack it with a roll of wrapping paper to get it down!). Inside were a whole bunch of things we got on super clearance at Target last year….and I just had to get some cat pictures Smile

It’s Waffle Wednesday!

Lunch: Leftover chickpea delight in a Trader Joe’s pita pocket, with baby carrots on the side. Yum!

Afternoon snack: 1/4 cup dry roasted edamame. These are SO good!

Dinner: (woooo scary picture, sorry!) Breakfast for dinner! Four eggs (1 yolk, 3 whites), with two veggie sausage links chopped up and mixed in. Oh, and a slice of toasted Ezekiel sesame bread!

After dinner, I went to Turbo Kick! The music was ridiculous last night…lots of stuff that reminded me of dance parties in college (Flo-Rida’s “apple bottom jeans, boots with the fur” song, the “shots” song)….oh man, it was a blast! And I’m pretty sure the instructor drank about 50 Red Bulls beforehand…he was jumping all over the place and going crazy! It definitely kept the energy level super high in that room!

I whipped up a quick protein shake when I got back:

  • 1 cup unsweetened vanilla almond milk
  • About 10 ice cubes
  • Cookies n’ cream protein powder

Okay, I’m finally all caught up to today’s food! Phew!

Breakfast:

Helloooooo, Waffle Wednesday!

I got a free box of Van’s flax waffles on Sunday (gotta love coupons!), and was excited to finally try them for breakfast today!

The box’s directions suggested to cook them on a wire rack in the oven – what a great idea! Usually, I put waffles directly on the tray and one side gets a lot toastier than the other….. not anymore!

On the waffles:

  • Homemade almond butter (waffle on the right)
  • Homemade cashew butter, mixed with a spoonful of pumpkin (waffle on the left)
  • Topped with sliced banana

*I toasted the waffles almost all of the way before adding the toppings, and heating everything together in the oven for a few minutes.

This was reaaaaally good! The waffles themselves were a hit – nice and fluffy, with a bit of a crunch on the outer part. I ended up sandwiching the two together and eating it with my hands, instead of a fork Smile with tongue out

Body Pump was great as usual this morning. I just love that class! There were several newbies there today…it’s hard to believe that I’ve only been going for about 2 weeks – I feel so much stronger already!

Lunch:

A boring bowl of leftovers Eye rolling smile

I think it’s about time to move the beans and harvest grains to the freezer….eating them almost every day is no. longer. fun. or. tasty.

Anywho, here’s what I put in the bowl:

  • Trader Joe’s harvest grains (1/2 cup)
  • Beans (kidney, black, and pinto)
  • Sunflower seeds

Although the above food was not the most exciting, this was:

I followed Julie’s recipe, except used chocolate protein powder and added 1/2 tbsp. cocoa powder. Delicious!

It brought my banana count for the day up to two….and I’m most likely definitely making a frozen banana delight this afternoon Open-mouthed smile

Homemade Pumpkin Frozen Yogurt

I took the rest of yesterday off from blogging, but I have some exciting pictures to share with you Smile

Since I ate breakfast when I woke up at 2:30 yesterday morning, I figured it would be a good idea to have a snack before Body Pump…

GATORADE 

Randalls has a new savings program called Just4U, and in my account was a coupon for free Gatorade Energy Chews. The package said to eat these about 15 minutes before exercising, but I split them up into 3 servings (one 45 min. before, one 30 min. before, and one 10 min. before). They tasted surprisingly good…kind of like a gummy vitamin….and I do think they gave me more energy during Body Pump. But….that also could have just been the placebo effect, or the really energetic instructor who played Britney Spears music during class (loved that!).

Lunch:

When I got home, I bee lined it right for the fridge so I could assemble my leftover taco salad! Yep, I was definitely daydreaming about it all morning Rolling on the floor laughing

Pretty much the same salad as Sunday night, but no cheese (I forgot to pack some Sad smile)

  • Iceberg lettuce
  • Ground turkey
  • Beans
  • Avocado
  • Medium salsa
  • Corn relish

Yum. This was so good!

After lunch, I did some prep work for 4-ingredient pumpkin frozen yogurt.

In the bowl:

  • 1/2 cup vanilla greek yogurt
  • 1/2 cup pumpkin
  • Pumpkin pie spice
  • Cinnamon

*I only made half of the original recipe, and didn’t add any sugar

After stirring the ingredients together, I spooned the mixture into an ice cube tray and left it in the freezer for 3 hours.

Next, I popped the ice cubes into the food processor and this is what it turned out like! Wow, it looks a LOT like couscous..hahaha!

Don’t be scared though, it was really delicious and tasted a lot like pumpkin frozen yogurt. Definitely not as good as the kind you’d get at a frozen yogurt shop, but still pretty good for a homemade version! It would probably be amazing with peanut butter mixed in!

This tasty apple was calling my name about an hour later….Body Pump always makes me so hungry!

Dinner:

A nice, lovely bowl of leftovers (these are starting to get kind of boring!)

  • Trader Joe’s harvest grains
  • Texas caviar/bean concoction
  • Topped with sunflower seeds (a good choice!)

I ate this with chopsticks, and it was really difficult to get more than one or two beans in my mouth at a time! Chopstick success! (I’m trying to eat slower so I digest food better…)

And for dessert:

I was starting to feel snacky, so I made a really filling pumpkin pie smoothie.

I used Julie’s pumpkin pie protein smoothie recipe, but used chocolate protein powder instead of vanilla. An excellent choice!

  • 1/2 cup oats
  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 tbsp. chia seeds (which I forgot to stir and got all clumped together on the bottom Sad smile)
  • 1/2 tbsp. flaxseed
  • 1 small gala apple, chopped
  • Cinnamon
  • Topped with a spoonful of homemade almond butter!

It’s looking like I’m going to have to discover some good banana breakfast recipes…I’m all out of apples! The horror!
