Breakfast:
An Elvis Omelet!
Bud and I ordered a chocolate banana omelet at breakfast one morning on our honeymoon, and I’ve tried several times to recreate it. Today’s attempt was the best so far
Not the best picture, but above is what we got on our honeymoon (we added peanut butter and sliced bananas to the top).
Here’s how to make your own!
Step 1: Gather your ingredients
- Eggs
- Peanut butter
- Banana
- Dark chocolate
- Cinnamon (not shown)
Step 2: Whisk together 3 eggs (1 whole, 2 whites) and add a sprinkle of cinnamon
Step 3: Pour egg mixture onto hot pan
Step 4: Add 1/2 of banana (sliced) and 1/2 of dark chocolate piece (finely chopped) to 1/2 of the egg
Step 5: Flip the half with no toppings over the topping’d half
*Try not to break it!
Step 6: Let sit for a minute or so, and flip. Continue flipping back and forth (every minute or so), until omelet looks fully cooked to your liking!
Step 7: Take picture of cat plate
Step 8: Put omelet on plate and top with peanut butter, remaining banana slices, and remaining chocolate pieces
Step 9: Drool
Step 10: Devour with fork
Step 11: Lick plate
Step 12: Make yourself another (hahaha just kidding, this is one filling breakfast!)
I enjoyed my omelet with a tasty tasty cup of caramel apple coffee.

Here it is! Archer Farms Caramel Apple coffee. MMMMMMMMMMMMM. It seriously tastes like apple cider, in coffee form. Deeeelicious. I’ve had my eye on this for a while, so when my mom called from Target asking what coffee I wanted for my visit, it was #1 on the list!
After breakfast, I did a shortened version of Body Pump in my parent’s workout room. I set the timer on my phone for 2 minutes, and when it went off, I switched what muscle group I worked.

5. Biceps
6. Lunges
7. Shoulders
8. Abs
A quick, but good workout!

We drove a little over an hour to Harney & Sons for a nice lunch and tea tasting. Such a cute place!
Lunch for me a was a bowl of greek yogurt with fresh granola and fruit on top. It was so good! And I was pleasantly surprised to find pineapple in there!
Harney & Sons is a specialty tea place that my parents love. Well, they love their tea. The customer service wasn’t super today
The tea room had a BAZILLION flavors, and we got to choose any one we wanted to try.
I tried the Cranberry Autumn, which was pretty good. It smelled better than it tasted though…so I ended up leaving with a different flavor that smelled amazing.

My parents stocked up on all of their favorite flavors. They drink this stuff all day long!
It was a beautiful day in New York, so we went on a short walk after our tea tasting. Look how beautiful the leaves are!

We stopped at PeachWave on the way home for some frozen yogurt….holy cow this stuff was delicious! In my cup: peanut butter yogurt, pumpkin pie yogurt, graham cracker crumbs, and peanuts. Yum. Yum. Yum. We’re definitely going to have to go back at least once while I’m here!
My mom doesn’t really like yogurt, so she’s been hesitant to try out frozen yogurt. I think she’s a fan now!!!
