I’ll Be Back!

Happy Halloween!

WOW it’s been about a week since I wrote last –  yikes!

Things have been preeeetty busy here with packing up the house. Oh, and on Sunday I dropped Charlie & Artie off with a friend who’s going to take of them while we’re in Virginia.

Charlie was super easy to get in the carrier (he actually went in there on his own!) but Artie took over an hour. Ugh. He was NOT happy!

The house is so quiet without them! Now whenever I hear a creak or strange noise, it makes me jumpy (since I know it can’t be from the cats!).

The past few days, I haven’t been taking pictures of meals – they’ve been mostly a bunch of random things put together, since I’m using up leftover food from the freezer & pantry.

*I’m actually really excited to wash them all….but I ran out of dish soap Sad smile Today I’ll probably pick up a small bottle, and just bring it to Virginia. I wonder if they’ll start coming out with holiday scented dish soap?!

The past few days, I’ve been drinking a few more cups of coffee than usual….my sleep has started getting out of whack again (probably because I’m so EXCITED for Friday!!!!!!!!!!!!!). The Keurig has become my new best friend! I’ve been using it to make tea too (since I already packed our electric kettle).

This will probably be my last post for a week or two – tomorrow I’m heading to Illinois, and Friday is Bud’s graduation from boot camp! Next week I’ll be driving to Virginia and then hopefully things will be back to (somewhat) normal Smile.

The past week has flown by SUPER fast – which I’m really grateful for – and now I’m in serious packing/cleaning/running errands mode!

This weekend I drove to Dallas to visit my sister & brother in-law. We went to the Dallas Arboretum on Saturday to see their Chihuly Exhibit and Pumpkin Village – it was really neat!

I took the weekend off from taking pictures (except for the ones I just showed you!), but got back on track this morning!

Breakfast:

Overnight oats! (and pumpkin spice coffee Smile)

  • 1/2 c. oats
  • 1/2 c. unsweetened vanilla almond milk
  • 1/2 tbsp. chia seeds
  • 1/2 tbsp. flaxseeds
  • Cinnamon
  • Topped with 1/2 tbsp. peanut butter this morning

Yum. This breakfast is probably going to show up on here for, well, a long time!

Body Pump this morning was really good (except for the sound system acting up and the loud static..). We had a substitute instructor, and she was pretty darn intense looking. I liked her better than the regular Monday instructor, but not quite as much as the Wednesday & Friday one. Maybe because she made us do a lot of pushups, hehehe

Healthy Reese’s Peanut Butter Cup Frozen Delight! I used a whole scoop of protein powder, instead of 1/2 scoop (my muscles needed an extra protein boost after Body Pump!).

Yum. This is so good.

I also had the rest of my leftover chickpea delight. Over a month later, I’ve finally finished the batch off! It got progressively mushier in the container as time went by (probably from all of the microwaving) – so today’s bowl has a hummus-like texture. Not bad!

This afternoon, we got a Halloween care package from my aunt & uncle – and I was stoked to see this package of donuts inside:

I ate one right away, and it (surprisingly) filled me up until dinner. Usually donuts don’t satisfy my hunger very well, but these ones are nice and fluffy and did the trick!

While I was in CT visiting my family, my mom gave me her Dunkin’ Donuts birthday coupon (she doesn’t drink coffee). If you join Dunkin Donuts UpDDate, they mail you a free medium drink coupon for signing up, and one for your birthday!

I got an iced coffee with skim milk – it was delicious! Dunkin Donuts has a white chocolate pumpkin latte right now, but I looked up it’s nutrition facts online today and decided not to go for it (it has a lot of sugar…and I’d had a donut for my afternoon snack!)

After getting my free (Smile) iced coffee, I headed to CVS to get 3 free greeting cards!

Well, they’re not technically free, but I got three 99cent American Greetings cards and $3 Extra Care Bucks printed out on my receipt. Extra Care Bucks are pretty much like a CVS giftcard, except they expire in a few weeks. I just ran out of face lotion, so I’ll just use my $3 Extra Care Bucks towards a new bottle. Horray! Usually there aren’t too many options for 99 cent cards, but CVS had a whole bunch of Halloween and Thanksgiving ones today!

I picked up a pre-made cranberry-gorgonzola turkey burger at HEB today for an easy dinner.

These burgers are usually REALLY good – but I burnt mine tonight Sad smile I still haven’t mastered the correct way to cook meat (that’s what I have Bud for!) – tonight I had the heat on too high and didn’t realize it until I smelled burnt turkey. Ohhhhh well….it was definitely still edible.

Question of the Day:

What cooking technique do you still need to/want to master?

I would like to improve my chopping skills, and learn how to cook meat!

I enjoyed a nice bowl of overnight apples & cinnamon oats at a decent hour (5:30 a.m.). Oh, and some caramel apple pie coffee!

This morning’s Turbo Kick class was just OK… I definitely like the Tuesday night instructor way better (it makes a huge difference when they’re energetic and explain things clearly). However, class ended with a solid 15 minutes of buns and abs – which was a pleasant surprise!

Lunch:

Oh man, I was daydreaming about this all morning – leftovers from last night!

  • Salmon with grilled pineapple (such a good combination!)
  • Salad with a generous serving of nuts & cranberries

Before venturing out to drop boxes off at Goodwill and get a few freebies (!!), I made this. I’ve finally got this perfected!!!

I’ll call it: Healthy Reese’s Peanut Butter Cup Frozen Delight!

In the food processor:

  • 1 frozen banana
  • 1/2 scoop chocolate protein powder
  • 1/2 tbsp. peanut butter
  • Topped with another 1/2 tbsp. of peanut butter

Go make this! Right now!

While out and about, I got myself a free cup of McDonald’s Premium Roast coffee. (courtesy of my McDonald’s 2012 calendar that has one free coupon a month inside!). This coffee was surprisingly good – I ended up drinking about half of the cup black, and put the rest in the fridge for breakfast because it was REALLY strong! It did take a long time to cool down to drinking temperature though…I probably let it sit for about 15-20 minutes.

*I recently watched a documentary on HBO about a lady who sued McDonald’s because she spilled a cup of their coffee on herself and was severely burned. It sounds like a crazy lawsuit, but she actually had a valid argument (McDonald’s used to keep their coffee dangerously hot). McDonald’s has made an effort to lower their coffee temperature recently, but I’m still going to play it safe and let it cool for a bit!

I decided to print a wedding photo, since we haven’t framed too many yet. Well, it turns out we don’t have any 8×10’’ frames…argh!!

While walking out of Walgreens with my free picture, I saw a huge display of popcorn balls. Popcorn balls are one of my favorite fall treats, but I actually don’t think I’ve had one in a few years! (probably because they’re usually sold in big boxes, and that would be dangerous to have around the house!). I walked by the popcorn balls and out of the store, and then I decided to go for it and bought one! It was only 60 something cents, so I couldn’t resist!

*I enjoyed it after dinner, and it was delicious. Actually, it tasted a little bit stale, but it was still delicious Smile

A Really Huge, Gigantic, Massive Apple!

Happy Wednesday – the week’s just about halfway over already!!!! Ever since I got back from Connecticut, time has been flying by and I am most definitely not complaining!

Before I get to the huge apple (you’re going to be so jealous!), here are some food updates!

Yesterday afternoon I snacked on a cup of Kashi GoLean cereal (it has a ton of fiber & protein Smile), and had a cup of pumpkin coffee. I definitely needed a pick-me-up since I’d been awake since 4:30 a.m.!

Dinner:

Well I did have a piece of toast (Ezekiel Sesame), but also had scrambled eggs (1 whole, 3 whites). I didn’t want to eat a huge dinner before Turbo Kick…

But…

The chickpeas from lunch attacked me during class. Geez. It’s looking like I shouldn’t eat beans the entire day before Turbo Kick…unless I’m in the mood for some serious interesting sound effects. Hahahaha!

After Turbo Kick, I whipped up a protein smoothie:

  • 1 cup unsweetened vanilla almond milk
  • 9 ice cubes (I counted!)
  • 1 scoop chocolate protein powder
  • 2 tsp. dark chocolate cocoa powder (found this lurking in the back of the cabinet yesterday!)
  • 1/2 tbsp. peanut butter

Yum. The dark chocolate cocoa powder was kind of overpowering though…next time I’ll cut it down to 1 tsp.

Today’s Breakfast:

In honor of Waffle Wednesday, I made a peanut butter & banana waffle sandwich! It was so good,that I gobbled it down in probably 5 seconds. Yum. Perfect Body Pump fuel!

Body Pump this morning was kind of disappointing…

Well, the class itself was great, but I was feeling kind of loopy/tired/sore from TurboKick, so I used lighter weights than normal for about half of the class. Oh well. I’m glad I listened to my muscles (they probably need more than 13.5 hours inbetween classes to recover), but it was still frustrating!

Okay, it’s time for the really exiting apple!

A new HEB opened today – which is SUPER exciting because it’s literally a mile from our house! I just found out on Saturday that it was opening today (I thought it wouldn’t be opening until after we move in November), and have been really excited to check it out. Some of our favorite things to buy at HEB are:

  • Coffee (especially Texas Pecan & Lunch with Elvis)
  • HEB honey roasted peanut butter
  • HEB cranberry gorgonzola turkey burgers (in the fresh meat section)
  • Fresh spices
  • Produce (they have the freshest around!)

They even send out a $5 off $50 or more purchase to everyone who lives nearby! (I Red heartcoupons!)

I was planning on using the coupon to stock up on Bud’s favorite things and surprising him with them when we get to Virginia, but it’s not looking like that’s going to happen anymore…

This new store is AWFUL! Well, not awful, but I’m really disappointed.

Reason #1: The parking lot isn’t nearly big enough (it took me longer to find a parking space than it did for me to drive to the store!) Yes, it’s grand opening day, but they seriously need to fix this issue!

Reason #2: It doesn’t have ANY of our favorites, except for produce.

Hellooooo, apples!

Reason #3: It didn’t have any caramel apples (I was planning on treating myself to one today…such a bummer!)

I went to the store mid-afternoon, when I started feeling a bit hungry. HEB always  has foods to sample, and at least I wasn’t let down by that today! I nibbled on guacamole, cheese bread, blueberry crumb cake (YUM!), turkey, and a gingersnap cookie (YUM!).

Well, even though this new HEB doesn’t have most of what I was looking/hoping for, I’ll still probably go back a few times before we move. It’s SO close to our house, and they have lower regular prices on a lot of items that I buy frequently (oats, yogurt, produce). And, they have lots of samples!

They also have one more thing I’ll for sure be getting again soon:

HUGE, delicious apples.

OH man. I was walking through the apple section (favorite part of the store!), and this apple caught my eye. It was so big and perfect looking, that I bought it without even feeling bad about the price. TWO DOLLARS! For an apple!

Let me tell you, this apple was worth every penny. The entire drive home, I debated whether to slice it or eat it whole… I ended up eating it whole, and it took a loooooong time! My mouth could barely bite into it, it was so big! At about the halfway point, I started slowing down, and it felt kind of like I was competing in an apple-eating competition Open-mouthed smileNot to worry, I powered through it and happily enjoyed every bite. Maybe I’ll go back tomorrow at use my coupon to get 25 apples for $45?!

This apple reminded me a lot of when Bud and I were first dating. When I would visit him in Houston, we’d go to HEB and get apples and their honey roasted peanut butter. Bud’s an apple slicing expert! (me, not so much. I don’t know how to get around that little piece of core in the slices!). I don’t know how this all started, but Bud’s mom often buys me a really good apple when she goes grocery shopping Red heartI’d probably get way more excited over an apple than a candy bar if I still went trick or treating!

Cardboard Box Bonanza

It’s Tuesday already – Horray! 16 more days until the end of boot camp Open-mouthed smile

Today I got a good start on packing – the cats are loving the cardboard boxes everywhere!

The nice people at Home Depot gave me a bunch of cardboard boxes, and even put them on a wagon for me! I stopped by Target too, but they only had a few (I might go back tomorrow when their truck comes in…depending on how many boxes I use today).

Reason #1 why I asked around at stores: Free boxes! Why spend money!

Reason #2: I’ve been reading online that the Navy moving company doesn’t let you pack, and they do it their way. Well….I’d rather not be spending money on nice boxes if they’re just going to use theirs anyways! (I’m packing everything myself anyways, just so I know exactly where everything is…)

Charlie & Artie are loving their new toys! Hahahaha, I won’t be surprised if I wake up tomorrow to find bite marks on all of the corners Smile

Packing is hard work! I haven’t gotten too much done yet, but I did empty our bookshelf and lugged it upstairs. Phew!

A few hours later (after watching The Descendants), I did level 1 of Jillian Michaels’ Six Week Six Pack DVD. I really like level 1, but it’s getting pretty easy so I’m going to upgrade to level 2 next time!

Mixed in the food processor:

  • 1 frozen banana (previously sliced)
  • 1/2 scoop chocolate protein powder
  • 1/2 tbsp. peanut butter

I added another 1/2 tbsp. of peanut butter to the top Smile

Wow, this turned out really tasty!

  • Topped with a spoonful of peanut butter (in the picture, it looks more like a massive heap!)

I’m loving my new mug!

A few hours after breakfast, I headed off to my first Body Pump class in a few weeks! I warmed up with 20 min. on the elliptical beforehand, which was definitely a good idea since the workout room was freezing! Today’s class was really fun, thanks to the man who was grunting the entire time. I thought it was absolutely hilarious Open-mouthed smile

I think Charlie and Artie definitely know something’s up, since I started getting boxes out and packing a little bit today. Charlie’s been moping around, and Artie’s been extra jumpy. Poor cats Sad smile 

It’s hard to believe that November 2nd is only two and a half weeks away!!!!!!! The past five and a half weeks have gone by really quickly (although sometimes it feels like time is moving slower than a sloth…), and I’m really really really excited to see Bud!!!! Whenever I see a member of the military in public, it makes me think of him. Oh, and pretty much whenever I see a couple in public SmileThere was a man on my flight on Saturday who had the same exact green luggage bag as Bud…that kind of tripped me out! I was secretly hoping that he was hiding somewhere on the airplane! Hahahaha!

I have a feeling that the next few weeks are going to fly by (thank goodness!), but I have a ton of packing to do – yikes! It’s going to be easy to pack my things, but it’s hard to know what he’s going to want right away. This is really funny, but it’s going to be so difficult for me to bring only a few Christmas decorations! I Red heartChristmas!
